Waterside Cafe, the multi-cuisine speciality restaurant of the Taj Banjara, is hosting a Southern Spice Food Festival for all the lovers of South-Indian cuisine. For this festival, Taj Banjara is introducing the concept of thali. Thalis from Tamil Nadu, Karnataka and Kerala will offer the authentic South-Indian spread of rice, sambar, rasam, vegetable curry, plaintain chips or some fried savory, chutney, pickle, papad and yogurt. Yogurt is usually a must to balance the fiery tastes of South-Indian meals. Coconut will be used liberally both as a garnish and in the cooking.
Chef P M Rajindran from the Southern Spice restaurant of Taj Coromandal, Chennai, will be preparing his signature dishes like Alleppey Fish Curry, Koshi Vartha Koshambu, Mamsam Koora and Kori Kempu for the festival.
And to add the final touch of authenticity, the famous filter coffee from Tamil Nadu will be served with the meal. Tamil Nadu is famous for its filter coffee, and every Southern cuisine lover will vouch for the magic of this special coffee.
The festival will have a buffet spread for lunch, serve a la carte with a thali option for dinner, and will have a variety of authentic vegetarian and non-vegetarian thalis from Tamil Nadu, Karnataka and Kerala.
