Kebab-E-Bahar, the Awadhi restaurant of Taj Banjara, is presenting an ethnic preparation of food at the Wood Fire Food Festival, from 26th to 4th May. In-house chef Hrudananda Behera and his team, the brains behind the exotic festival, have designed a special menu containing many traditional items.
The special menu includes mouth-watering Indian delicacies like Pathar Ke Gosht, Murg Thandai Kebab, Anardhane Wale Aloo Ki Seekh, Yakhani Shorba, Paya, Tawey De Latpate Jheenge, Tawa Murg Khatta Pyaz, Murg Methi, MurgPanchrangi, Masaledar Tawa Mushroom, Aloo Katliyan Lasooni, Kurkuri Bhindi, Achari Mirchi Ka Kadi, Bilayati vegetable Jalfrezi, Tadka Wali Moong Ka Dal, Yakhni Pulao, Mushroom Pulao, Ulta Tawa Ka Paratha, Sheer Khorma, Badam Basundi, Chena Pooda and Gulab Jamoon Kulfi.
Cooking food over wood-fire is an age-old tradition, and enhances the taste and aroma of the food. It adds a smoky flavour to the dish, especially if cooked over untreated and natural wood. Before the wood is used for cooking, it is soaked for an hour, dried, and oil is applied to its surface.
