One of the most popular annual food festivals of Taj Banjara, the Dhaba Food Festival, is on at the Kebab-E-Bahar, from 16th to 20th April. Dhabas are roadside eateries with attached paan (betel nut) shops and a rural ambience where most of the guests sit on charpais or cane chairs and enjoy the highway experience along with their near and dear. The ambience here is a blend of that rustic roadside Punjabi eatery environment and 5-star perfection.
Executive Chef Hrudananda Behera and Chef Chamanlal will present a wide array of delicious Punjabi dishes that are popular at traditional dhabas. The a la carte menu for the festival will include Sukhee Bhindi, Pakoreyan Wali Kadhi, Sarson Da Saag, Bhartha Rawalpindiwalla, Pindi Chole, Subz Ki Biryani Kapurthala Wali, Makai Ki Roti, Bhutteyan Da Kebab, Makhanwalla Paneer Tikka Masala, Daal Makhani, Phaldhari Rasmalai and Mausam Da Ras.
Punjabi cuisine has a diverse range of dishes. Home-cooked and restaurant Punjabi cuisine can vary significantly - restaurants use large amounts of desi ghee and liberal amounts of butter and cream, while home cooking is centred mainly upon ground masalas (spice). Though wheat is a staple, rice is cooked on special occasions in dishes like Roh Di Kheer.
