The Waterside Café, the multi-speciality restaurant of Taj Banjara, is presenting Sumptuously South, the Chettinad food festival, from 28th September. The fest is on till 7th October, for both a la carte dinner and lunch. Chef H N Vijayan from Taj Connemara, Chennai, will prepare and supervise the entire menu for the fest. Vijayan has 23 years of experience with the Taj group of hotels, and has been associated with South-Indian cuisine since he started his career as a chef at Taj Residency, Bangalore.
Tamil Nadu brings to one's mind the taste of idlies, dosas, sambar, vadas and many different chutneys. Most of the vegetarian and non-vegetarian dishes of the state have a generous use of fresh ground spices and coconut. The final tempering of the dish with oil, mustard, curry leaves, red chillies and urad dal most times is a common practice.
The Achis of the Chettiar community (the business community of one of the region) in Tamil Nadu use a lot of sun-dried vegetables and meats in their dishes. The popular dishes part of the festval are Uppa Kari, Kuraveppali Era, Chicken Chettinad, Kalan Melagu, Kozhi Melagu, Nandu Melagu, Nandu Saru, Kaikari Stew, Paya Korma, Meen Veruval, Meen Manga Kozhambu, Keerai Poondu Massial, Katrikai Kara Kozhambu, Cauliflower Pattani Koorma, Veechu Paratha and Appam. The dessert is made with tender coconut flesh and known as Elaneer Payasam. Many of the desserts are in form of payasam or flavored halwa made with fruits and nuts.
