Kebab-E-Bahar, the ethnic Indian speciality restaurant of Hotel Taj Banjara, is hosting the food festival from the region of Bundelkhand, from 30th April to 10th May. Chef Manish Tyagi from Banjar Tola and Kanha National Park will share the unexplored flavours with the food connoisseurs here. Many of the dishes come from the tribals in the jungle areas of Jhansi and Indore, Madhya Pradesh.
Some of the famous vegetarian dishes of the region are Kunde Ka Bhatta, Murar Ka Kebab, Tapu, Kodu Til Ka Bhaat (a preparation of rice with black sesame), Kunde Ka Bhatta(similar to the traditional baigan ka bharta), while in the non-vegetarian section, there is Bhunji Macharia, Macharia Ke Kebab, Machariya Tarkari, Bundeli Gosht, Bakra Badi, Bundelkhand Murg and Sighdi Wala Kukra. In the desserts, Rass Kheer a sweet dish prepared without sugar by mixing the extracts of the mahua flower with milk and millets, another delicacy here.
Bundelkhand comprises of 17 districts of Madhya Pradesh. The food of this region is mostly vegetarian and has a speciality of Jainism. Bundelkhandi cuisine extensively uses clay pot for the preparation of their food and the fact that it is cooked on firewood gives it a unique flavour. The two types of rice widely used in this region are Kodu and Kudki. The puris here are made from bajra and jawari.
