Would you like to have a taste of the food that was enjoyed by our freedom fighters? You can either head to the past, or to Novotel Hyderabad Airport, which is, hopefully, closer home. The hotel is celebrating 62 years of Indian independence by reviving recipes from the pre-independence era, when many states were not formed. The festival is on at its restaurants, The Square and Haldi, from 8th August to 15th August, for dinner.
At Haldi, the specialty Indian restaurant, food from all 4 regions (Saurashtra, Bengal, Deccan and Frontier) from the pre-independence era will be served as a buffet and a la carte. Each day, food from different regions in the country will be served - Saurashtra (Maharashtra and Gujarat) cuisine will be served on 8th and 9th August, food from the Bengal region on 10th and 11th August, Deccan (South India) specialities on 12th and 13th August, and food from the Frontier region (Punjab and Delhi) on 14th and 15th August.
The welcome drink, and soups and starters will be part of the a la carte menu, and the main course is offered in the buffet as well as a la carte, at Haldi. Some pre-independence era treats are Bengal Chicken Roll, Posto Bora, Mache Kalia and Khasa Mongsho in the Bengal menu; varieties of parathas and special dals in the Frontier menu; and Sambar, Pappu and Biryani in the Deccan menu.
The Square is celebrating the independence week festival by amalgamating colonial British cuisines with Indian delicacies, from pre-independence times. Apart from the décor that portrays cycle rickshaws, the ancient grocery store and tri-colour flags, the restaurant also takes you through a culinary journey of provinces like Sailana, Travancore, Banaras and Malabar.
The buffet includes Indian, Chinese and Continental cuisines. Lamb Biryani, Chicken Biryani and Vegetable Biryani, with Mirchi Ka Salan, are a constant feature throughout the festival. 2 types of dal (Dal Tadka, Dal Makhani, Yellow Dal), 7 curries including Paneer, Baby Corn, Fish, Lamb, and Chinese Buffalo Tandelon With Sauce (Jay or Chicken sauce), and some Continental specials, will also be part of the spread.
The desserts include Orange Chiffon Pie, Rasberry & Yogurt Mousse, Spanish Orange Cake, Tiramisu, Spice Chocolate Pot, Sugar Free Mousse, Mixed Soup Gatto Cake and Caramel Brule.
The price of the buffet is Rs. 1,947 for 4 people at The Square, and for 2 people at Haldi. Please contact 6625-0000 for further details.
